Soaked your almonds before eating them (especially if you are making almond milk) is a key step with helping your body digest them and get more nutrients from them. You see, there are toxic substances and nutritional inhibitors in seeds, nuts and grains that you can eliminate by soaking them beforehand. Some of these include: phytic acid and enzyme inhibitors (among many others). These pesky inhibitors will warp and/or denature the active site of an enzyme which will be no good for your digestive system when it’s trying to break down the nuts for nutrients.
Always soak before you bake, blend or eat. Your body will thank you!
Easy Fresh Almond Milk
1 cup dried raw almonds
H2O for soaking the almonds (enough to cover them in a bowl)
4-5 cups h2o for the actual milk: 4 cups for thicker milk, 5 for thinner
Directions
1. Soak almonds in a large bowl with enough filtered h2o to cover them. It’s best to let them soak for 6-8 hours OR overnight. However, I have soaked mine for 1-2 hours when I’ve been in a pinch for time and it has turned out fine. I use a vitamix though and it is a bit more powerful and sharp than a lot of blenders- so 1-2 hours worked for me. I still recommend soaking for longer if you have a different blender.
Optional add-in combos (I prefer the maple syrup combo!)
- 1-2 tbsp organic maple syrup + a few pinches of pink sea salt
- 1-2 tbsp raw honey + a few pinches sea salt + 1/2 tsp ground cinnamon
