High-Protein Lean Beef & Quinoa Burgers
Happy Thursday! A few nights ago, I was craving beef burgers, which I haven’t had in forever. I bought some grass-fed beef from my work and looked through my fridge to see what I needed to use up and what could increase the nutrient- content of these bad boys. I decided on adding high-protein ingredients like quinoa, eggs and oats and pairing it with some veggies like carrots and yams. The end result? Delicious, satisfying, healthy burgers.
Beef & Quinoa Burgers
454g of lean grass-fed ground beef uncooked (about 2 cups worth)
1/2 red or white onion – chopped
2-3 garlic cloves – minced
1 cup of grated carrots
1 cup grated yams
1 cup cooked quinoa
1 egg
1 cup rolled oats uncooked
2 tbsp olive oil
2 tsp sea salt + 1 tsp cracked black pepper (you can add less salt if preferred)
1.5 tsp onion powder
1 tsp garlic powder
1 tsp dried oregano
1 tsp sriracha
1 tbsp no-sugar added ketchup (or bbq sauce if preferred)
Directions: Once you mince, grate and chop anything that needs it (see above in ingredients), take a large bowl and add all ingredients to it. If you don’t want to grate the veggies, you can finely chop them as well. I personally find the mixture comes together better when they are grated. Mix it all up with your hands so you can ensure it’s all combined. Once that’s done, heat a large frying pan on medium-high heat, add some oil and let heat up. After it’s been heated, shape the mixture into burgers (you can make them as big or thick as you want) and cook on each side until fully cooked.
TIP: If you live alone and want to save some of these, let them cool off then saran wrap them individually and put into a ziploc bag. Push all of the air out, seal the bag and put into the freezer.
