Pumpkin Spiced Protein Latte.. that’s healthy!
The season for pumpkin EVERYTHING is now here and I could not be more excited. This is hands down my favorite time of the year. I love it. So much. Calgary is absolutely beautiful right now… not too cold and the sun is still out (fingers crossed that it lasts a few more weeks!) This is also the time of year that those famous pumpkin spiced lattes from certain coffee shops come back. Now, although these taste soo good (because, hello – sugar), they are loaded with refined-sugars and have zero health benefits. I introduce to you, a healthy version of that drink that you can drink often if you wanted too!
Pumpkin Spiced Protein Latte
- 2 cups strong brewed coffee
- 1 – 1.5 cups almond milk (you can swap out for coconut or whole milk)
- 2 pitted dates OR 1-2 tbsp maple syrup. If you want it sweeter, you can add more. Dates are nice because they add sweetness, thickness & fiber to the drink. The sweetness varies with each person so add as much or as little as you want 🙂
- 3 tbsp pumpkin puree
- 1-2 tsp pumpkin pie spice mix (see below for DIY recipe)
- 1 scoop high quality collagen powder (this can add 6-8g of protein!)
- 1/2 tsp vanilla extract
- 1 tsp MCT oil (optional)Directions: If you have a vitamix, simply add all ingredients and blend until frothy and hot. Taste test it and add more of anything if needed (sweetener or spice mix). If you don’t have one, add all ingredients to a sauce pan and heat up while whisking it. Once heated and the dates are soft, add to a heat-allowed blender and blend until frothy OR froth up with a handheld blender.
Collagen is a great way to get extra protein and it’s fantastic for your hair, skin & nails.
Pure pumpkin puree is packed with vitamin C & fiber so eat away!
DIY Pumpkin Pie Spice Mix
- 3 tbsp ground cinnamon
- 2 tsp ground ginger
- 2 tsp ground nutmeg
- 1.5 tsp tsp cloves
- 1.5 tsp ground allspice
Directions: mix together in a small jar with a sealed lid.
