Strawberry Vanilla Chia Pudding
Mmm, this chia pudding was so yummy! I had it for 2 days and can’t wait until I make it again. This type of pudding is great for a quick and healthy breakfast that will keep you full for a lot longer than a sugar-filled muffin will.
Strawberry Vanilla Chia Pudding
1 cup unsweetened almond milk
3-4 tbsp chia seeds (start with 3 and add more if needed)
1/2 tsp pure vanilla extract
Coconut sugar (add as much as you prefer – I used about 1.5 tbsp- honey works too)
Pinch of pink sea salt
2 tbsp unsweetened coconut flakes
Directions: In a small bowl, mix together with a spoon: the almond milk, chia seeds, vanilla, coconut sugar or honey, pink sea salt and coconut flakes. Let sit overnight and check on it in the morning. If it seems to have too much liquid left, you can add a bit more chia seeds. Let sit until chia seeds have fully expanded. Stir every few hours. Enjoy!
