Warming Vegan Pumpkin Pie Elixir
The snow has arrived in Calgary and it is c o l d. One thing I love to do during the cold winter months is to create different kinds of hot drinks. Elixirs are my favorite because they can contain so many different healing super foods. Some of my favorite super-foods to add into hot beverages are: mushroom powders (chaga, reishi, lions mane, turkey tail to name a few. I will write a full post of these healing mushrooms soon!), maca, bee pollen, spirulina, ginger and turmeric. The brand “Four Sigmatic” has these amazing little one-serving packets of mushroom elixir combos that you can have on their own OR add to one of your hot drinks! One drink that I am obsessed with making lately is my warming vegan pumpkin spice elixir. It’s SO delicious and cozy, especially on those cold, chilly nights. You can skip the ever-so-popular Pumpkin Spice Lattes at coffee shops that are generally filled with 30-60g of processed sugars for this healing drink. You can make it with or without coffee… see below for the recipe.
Note: I am not affiliated with this company, I just really love their products!
Warming Vegan Pumpkin Spice Elixir
1-2 tsp maca powder (see below for maca benefits!)
3 tbsp pure pumpkin puree
1 cup almond milk
1 cup filtered h2o
1-2 tbsp maple syrup
1.5 tsp ground cinnamon
Dash or two of ground allspice
Dash of ground clove
Dash ground ginger (or fresh)
1 tsp pure vanilla
Dash of ground nutmeg (optional)
Directions: In a pot set to medium heat on the stove-top, combine all ingredients and whisk until well-combined. Stir occasionally until a small boil appears. You can turn up the heat a bit more if needed. Once done, transfer to a blender that can handle high heat (I used my vitamix and it works amazing for this!) Blend until slightly frothy. Serve with a sprinkle of cinnamon on top.
TIP: You can replace the h2o with 1 cup of strong brewed coffee to make this more of a “latte” type drink. I’ve tried this too and it was AMAZING. Trust me, amazing!
Ingredient Spotlight: MACA
Maca contains all 8 essential amino acids, 20 free-form fatty acids, calcium, zinc and magnesium. This super-food also contains iron and selenium. Maca has been known to help with hormone balancing and can help with energy levels. (depending on the individual!) You can start with 1 tsp and work your way up with whichever amount your comfortable with. Maca benefits can vary and totally depend on the individual and their body 🙂
